Helmet is off!  One more trip to Charlotte for final pics and exit casting, but D’s going with me and after that we don’t have to go back.  It’s been great to be able to snuggle him and kiss his head.  No sleep improvements yet, but we expect he’ll do better once we’re in the house and he ahs his own room.  Fingers crossed!

So nobody replied to my post begging for polenta recipes and we were forced to improvise.  Rather, D was.  I let him make his magic and the result was delicious.

Ingredients:

Directions:

  1. Grease the bottom of a 13×9 baking pan.  Slice polenta and place it in a layer in the bottom of the pan.  Bake at 375 degrees while preparing ground beef mixture.
  2. Prepare ground beef according to instructions on taco seasoning packet.
  3. Add canned black beans (drained), tomato paste, and frozen veggies to skillet.  Mix well and simmer for about 10 minutes.
  4. Take polenta out of oven, add beef mixture and top w/ mexican cheese.
  5. Cook until cheese is golden brown and forms crust…about 25 minutes.

The only thing I’d change is adding more tomatoes…there weren’t enough in the frozen veggies.  But I REALLY love tomatoes, so that’s just a personal preference.  Obviously, not everyone will be able to find those specific products, so improvise as necessary.

And I’m still looking for polenta ideas, so post ’em if you got ’em!

I forgot to come back and talk about the helmet, didn’t I?

Well, it’s going to be a max of one more week from Friday…he is outgrowing it already and his correction is excellent.  (Thank God, because we can’t afford another one!)  That also means no more trips to Charlotte, which I am totally thrilled about.  It’s exhausting, and tough to do with both kids.  I’m glad we did it, but also glad that our experience is going to be short and sweet!

The house and mortgage stuff is moving along nicely.  Our inspection is scheduled for Feb. 2.  I’m not sure if I want everything to be perfect or maybe a few small flaws which we can use to bring down the price…

We’re trying to find a good weekend to get C baptized, hard to do when we have so much going on.  Hopefully before we close on the house, otherwise it will have to wait until April.  I really wanted to do it before now, but our plans kept getting messed up.

Yes, we got the snow and ice.  School was cancelled, which means J has only been two days since Jan. 2 when they started back after the holidays.  We laid around all day.  I made a delicious soy ginger salmon recipe I found on allrecipes.com.  Here’s a link for those interested.

It’s back to Charlotte tomorrow for what I hope is one of our last helmet adjustments.  C is now sitting on his own quite well AND crawling!  Not bad for the little boy who could barely hold his head up 3 months ago.

We’re getting the mortgage stuff all squared away…closing is scheduled for March 9.  A long wait, but it gives us time to get everything organized!  I am at a standstill with paint and decorating plans because I just can’t decide what I want to do.  Frustrating.

Grey’s Anatomy comes on shortly and tonight promises to be an excellent show, so I am going to get offline and lay down with C to watch it.  And speaking of C…I’m being summoned.  More after our helmet appointment!

We got the house and are trying to nail down a closing date.  We’re looking at March 10, which will leave us about 3 weeks to move since our lease is up at the end of March.  So if anyone wants to come help paint or move, you’re welcome to come anytime between March 10 and March 31! 😉

C is crawling, as of yesterday.  He has officially beat his little brother to that milestone.  He still has no teeth (for which I am eternally grateful!) but seems to be very close.

He and J are both getting over the nasty cold they managed to pass back and forth.   J hasn’t been to school in almost 2 weeks because of it.  He went back one day after the holidays and hasn’t been back since.  Hopefully this is the last bad cold…2 sick kids is more than I want to deal with right now!

D had to work today but our regular therapy appt is off due to the holiday so I may tote the kids over to Lowe’s for some paint chips.   I’m not sure what kind of furniture we’re getting for the living room so it may be hard to pick colors for that room but I have a sense of what we want everywhere else.  We’d like to paint as many rooms as possible before moving in so that we don’t have to deal with it while we’re living there.  Hopefully we can get it all done!

W Family Players

D is the dad, the husband, and the breadwinner. All around nice guy and good at pretty much everything he does. It's disgusting, really. But makes him worth keeping around.

M is the mom, the wife, and the hopeless housekeeper. At least the kids' heads haven't fallen off yet. Beyond that, she sucks at the "stay at home" thing. Oh, and she's the blogger.

J is the big boy. Born October 11 2002, he is in kindergarten and loves it. Now 6 years old, and too smart for his own good. Talks a lot but extremely entertaining.

C is the little boy. Born June 26, 2006, he went through a lot in his first year but is doing just fine now. The only blond in the family, so his paternity is routinely questioned by rude strangers.

V is our baby girl. She is brand new and arrived in January 2009. So far everything is going well. We're thrilled to have added the final piece to our family puzzle. And yes, she WILL be the final piece!
